While Canada's 100 Best Restaurants revealed its latest rankings on April 10, 2018, individual awards were also given to recognize excellence in the restaurant industry. Daniel Mongraw, Toqué! Pastry Chef, was named Best Pastry Chef in Canada.
Pastry Chef at Toqué! since 2013, Daniel Mongraw likes to accentuate natural forms and to highlight the richness of Quebec ingredients in his creations. His desserts with many contrasting flavours and elaborate presentations reflect the modern cuisine of Nordic countries. Fun fact, it's a pastry internship at Frantzén in Stockholm that proved to be the trigger that made him switch from the savory to the sweet side of the kitchen.
